20 Easy Lunch Ideas for Adults
Over the summer, I shared an easy lunch I was eating – cottage cheese with turkey, avocado, tomatoes, candied jalapeños and a generous sprinkle of Everything but the bagel seasoning.
It was wildly popular and I got a message that said “Would love to know any others meals you love like this! Or if your readers have suggestions. Seems silly but really is life changing to have an easy and yummy lunch for myself!”
I asked on Instagram and there were LOTS of easy lunch ideas! Here are some of my favorites!

Easy Lunch Ideas for Adults
- I love making a batch of soup or salad or something to eat all week. Right now Lilie Eats and Tells Chicken Waldorf salad and Mel’s Kitchen Cafe Tex Mex zucchini skillet are my favorites.
- I love big salads that keep well for a few days, pasta salad with veggies, planning dinner so I have leftovers or roasting veggies and meat on a sheet pan that I can reheat.
- I’m vegan so this recipe is vegan, but the plantyou account on insta is amazing for lunches. She does make ahead batch lunches a lot and they are always so easy and so yummy.
- I buy premade salads or salad kits and put them on a wrap.
- Every single day – cucumber, apples, carrots, cottage cheese, and turkey pepperoni. Sprinkle the cottage cheese with Everything but the Bagel seasoning.
- Kat can cook hungry girl salads and soups. I make a huge batch and eat it all week.
- I make burrito bowls. They are easy and quick and healthy.
- Honestly, of days I know are going to be absolutely insane or that I will be super tired I buy Trader Joe’s microwaveable butter chicken.
- I love using leftover meat like shredded pork or rotisserie chicken or grilled chicken and making a bowl. I try to keep roasted sweet potatoes on hand and then I add some greens, avocado, pickled onions, and my favorite dressing or sauce.
- My favorite salad that’s actually really filling: spring mix with fajita seasoned chicken, diced red onion, diced tomatoes, Primal Kitchen avocado cilantro lime dressing
- Greek Salad from Trader Joes, then I add their frozen falafel (heated in the air fryer)
- Just bagged salad with rotisserie chicken on top
- Homemade açaí bowls are my go-to. I use protein powder (affiliate code is JANSSEN) as my “sweetener” so it’s basically just fruit and protein powder topped with more fruit, a sprinkle of homemade granola, and a drizzle of honey. So delicious with clean ingredients!
- I love making a bowl of this chickpea salad and eating it throughout the week with a piece of sourdough, sometimes I put it on top of spring mix.
- Leftovers. I try to cook enough for dinner that we can have it for lunch the next day and then be done with it.
- Make a crustless quiche for the week. Add a small salad with vinaigrette. It’s my go to because I am like you and forget to eat.
- Low carb tortilla, romaine, sprinkle of cheese, turkey, honey mustard
- I end up buying a tub of salad mix and then making a mix between grilled chicken feta strawberries salad, and an Italian sub salad. But I’m struggling with this as well. It’s either salads or leftovers.
- Cottage cheese topped with cucumber and tomatoes, EVOO, and everything but the bagel spice. Scooped up with Triscuits.
- Avocado toast and or a big apple with peanut butter are 2 or my easy go tos
